Homemade Rotisserie Chicken?
When I go to Costco, it’s very easy to walk to the back of the store and see all those little chickens, lined up in a row, going round and round, all savory and brown, just waiting to be taken home and torn apart. In many ways it’s a pretty good value and an easy meal, whether you’re just tearing it off the bones and eating it, licking your fingers (yeah, I’ve done it) or adding other things to it. There are so many ways to use the meat.
-Loaded Buffalo Chicken Nachos (here)
-Fresh Chopped Fruit Salad
-Panini’s loaded with Avocado, Bacon, Pesto and Cheese
-Chicken Quesadilla with Roasted Red Pepper Sauce (here)
-Chicken Salad with walnuts and grapes
wait…….I could go on and on, but this is not a post about what you can make, it’s about making your own rotisserie chicken. RIGHT IN YOUR OWN KITCHEN! Not hard at all. Put it on in the morning and you don’t have to stop on your way home.
So next time you see those chickens on sale at the supermarket, pick up a few extra and get ready to impress yourself!
duh, chicken. I have made this with whole chicken but I’ve also used breasts with backs attached. I liked this way when I found them on sale because it’s mostly breast meat you end up with. You’ll also need the following things:
1. Crock Pot
2. Aluminum Foil
2 tsp Black Pepper
1.5 tsp Thyme
2 tsp Onion Powder
2 tsp Garlic Salt (you can use powder, just increase the salt to 2 tsp)
1 tsp Salt
2 tsp Chili Powder
1 TBSP Brown Sugar (if you’re doing Keto leave the sugar out)
1/2 tsp Seasoned Salt
2 tsp Paprika
1. Take two long sheets of aluminum foil (3 ft each) and twist together to form a long snake. Turn it into a coil and place on the bottom of your slow cooker. This is to keep the chicken off the bottom of the crock pot. You could do 4-5 balls of foil instead. (see photo…sorry it’s an after photo)
2. Wash and pat dry the chicken (see photo)
3. Combine the seasonings in a shallow dish and mix thoroughly
4. With the chicken on a cutting board(or counter) rub the seasonings all over the chicken, under the wings and around the drumsticks (see photo)
5. Place in slow cooker, making sure the chicken doesn’t touch the sides.
6. Put on lid and set on high. Cook for about 4.5 hours. Don’t be tempted to take the lid off as it increases the cooking time
7. Lift the cooked chicken onto a plate. You can either strip the meat off now (using tongs and a fork) or wait until it’s cool and use your fingers. I find it comes off much easier when hot. (you’ll notice in my picture I saved the wish bone…does anyone else still do that?)
