Birthday Cake Popcorn
Don’t you love all the fun recipes for popcorn these days? I ran into this one over a year ago and have been hooked on it and others ever since. How can you go wrong with popcorn, white chocolate and other assorted yummy things? You can’t! Birthday Cake Popcorn is a perfect gift to give away or make to keep and munch on yourself.
It’s a Family Affair
Birthday Cake Popcorn is a simple recipe that your kids (or grandkids) can help with. Once the corn is popped and the old maids are removed, spread it on the counter and start the process. Here’s a few tips for success:
- Remove old maids before coating with chocolate
- Melt the white chocolate (or melting wafers) and put in a zip lock bag; cut the corner and drizzle it over the popcorn
- Have your toppings ready for tossing
- You may have to add a bit more melted chocolate as you go to help the sprinkles/m&m’s stick
- Handle it carefully
- Pastel M&M’s (about 1/4 cup)
- White Popping Corn (3/4 cup)
- White Cake Mix (about 3 TBSP) (Walmart or your favorite grocery store)
- Pastel Sprinkles and Non Perils (about 1/4 cup)
- White Chocolate Chips or Vanilla Melting Wafers (1 Cup)
- Paper Bags (for popping your corn) or Air Popper (Dollar Store)
- Quart sized zip lock bags (Dollar Store)
**NOTE** If you want to make primary color birthday cake popcorn, use regular m&m’s and also primary colored sprinkles and non perils.
- Pop 3/4 cup of white popping corn
– if using paper lunch bags, put 3 TBSP in each bag, roll over twice and pop in microwave for 2 minutes per bag
– if using an air popper, pop 3/4 cup of popcorn
- Remove all “old maids” or un-popped kernels
- Spread on clean counter, keeping it close together
- Melt 1 cup white chocolate chips or vanilla melting wafers in a microwave safe bowl setting the time for 30 seconds, stir, 30 seconds, stir continuing until they are melted. Place in a quart sized zip lock bag, sealing it and then snipping off the corner 1/4 inch
- “pipe” over popcorn, covering half.
- Sprinkle with 1.5 TBSP of cake powder; 1/2 the sprinkles
- Continue with the second half, reserving some white chocolate for a top layer.
- Sprinkle with remaining cake powder and sprinkles
- With remaining melted chocolate (or melt another 1/4 cup) drizzle and add the m&m’s.
- Let the chocolate set. Place in bowl or small treat bags for giving
This is a light tasting, slightly sweet treat that isn’t overpowering. Great for sharing (but save a little for yourself)
